I am one of those people who hates chucking out leftovers so I decided to make this Thai dessert using what was left of the coconut milk from my last dish, Thai Curry Cottage Pie.

Recipe:

Leftover coconut milk (approx 100ml)
1 banana
1 tbsp granulated sugar
A pinch of salt

Banana coco

Method:

Chop the banana in to large chunks.

Add the coconut milk to a saucepan and warm on a low heat.

Add the banana, sugar and salt.

Stir and simmer until the coconut milk begins to bubble.

Leave to cool for a minute or two and enjoy!

    Banana and coconut! I love coconut, but have never thought about trying it with coconut. Very simple recipe, and it looks like it can be a refreshing drink or a sweet dessert. Lovely and hope Belle enjoyed it 👌
