Breakfast
One and a half slices of Hovis Best of Both toast. A strange quantity I know but it was because my daughter, Annabelle, wouldn’t eat her first slice (with strawberry jam) so I made another one with chocolate spread. She didn’t fancy that either so I ate the remaining quarters. I had my usual Nespresso, the Cosi flavour today, with hot soya milk and then a Clipper’s Organic Earl Grey tea with skimmed milk.
Lunch
I keep a jar of cajun spices in my cupboard which I like to use with pork escalopes. I liberally sprinkle it on, drizzle with vegetable oil and bake in the oven on gas mark 5 for 30 mins. I will then place some grated cheddar on top and cook until the cheese bubbles. I had this with a mixed leaf salad, tomato and cucumber.
Dinner
My husband made spaghetti with a carbonara sauce, spinach and salmon. The fish had been marinated in a sweet chili sauce. Although a bit spicy, it was really tasty. I’m lucky that Andy is a good cook as he likes to help out in the kitchen when he can.
Snacks
A fruit smoothie made with banana, blackberries, blueberries, strawberries, yoghurt and a dash of maple syrup. Whenever I have a fruit smoothie, it always makes me a bit broody as my husband would make me drink one every morning when I was pregnant with Annabelle.
I also had a Starbucks Soy Caramel Macchiato with a Mississippi Mud Muffin, as the smoothie doesn’t really count as a snack, does it?
