Thai Chicken and Rice

Khao Man Kai is one of my favourite Thai dishes. My mother and I tend to make this when we are together, as for some reason, food always tastes better when you eat with extended family and friends.

We will boil a free range, corn-fed chicken with coriander roots, peppercorn and garlic and serve with a soy bean and chilli sauce. The chicken is served on a bed of rice that has been cooked with garlic. I always miss Thailand whenever I eat this dish. Sitting in an open air restaurant, by the side of the road with our beloved Thai family and life-long friends.
