My husband loves sausage rolls and so I thought about creating a Thai version for him. Since the New Year our resolution has been to eat well during the week and we can indulge in a take-away and chocolately treat on Friday and Saturday nights. In order to fit in with a ‘healthier’ lifestyle, I reduced the sausage meat in the filling and added mashed sweet potato and served with salad. The only problem was that my husband enjoyed it too much and devoured three portions without any side salad!
I used lemongrass to add flavour to the sausage meat but I might also add stewed apple in the future for a touch of sweetness.
